Ingredients
  1. 3/4 cup coconut oil
  2. 1/4 cup coconut sugar (or Xylitol)
  3. 3 tablespoons natural almond butter, room temperature
  4. 2 teaspoons vanilla extract
  5. 1 flax egg
  6. 1 cup almond flour
  7. 1 cup hazelnut flour
  8. 1/2 cup coconut flour
  9. pinch salt
  10. 1/2 cup stevia sweetened chocolate chips or cacao nibs
Instructions
  1. In a stand mixer with a paddle attachment, cream together coconut oil and your sweetener. Add almond butter, vanilla, and flax egg. Mix until combined. Add flours and salt. Mix until a dough forms. Mix in chocolate chips by hand. Eat with a spoon! For any leftovers, roll dough into a log and wrap in parchment paper. Store in the fridge and let thaw about 30 minutes before ready to eat.
Notes
  1. I like to mix almond flour and hazelnut flour, but you can use 2 cups of the same flour if you prefer.
  2. You can also use Enjoy Life brand chocolate chips, although they do contain sugar (but no other artificial/funky ingredients.)
