Frosted Animal Cookies (Vegan, Gluten Free, Grain Free, Refined Sugar-Free)
A clean spin on a fun sweet treat.

Cookie Dough
  1. 1 1/2 cups almond flour
  2. 1/4 cup softened vegan butter spread (can sub palm shortening as well!)
  3. 3 tbsp maple syrup
  4. Pinch of salt
  5. 1/2 tsp vanilla extract
  6. 1/2 tsp almond extract
Frosting
  1. 1/2 cup palm shortening (you want to make sure you get a brand that is white like this one if you plan on trying to color it.)
  2. 1/4 cup maple syrup
  3. 2 tsp vanilla extract
  4. 2 tbsp arrowroot flour
  5. 2 tbsp coconut flour
  6. 2 tbsp coconut oil, melted
  7. 2 tbsp coconut butter
  8. Pinch of salt
  9. Optional: Homemade food coloring (can add a little red for a pinkish color, but do keep in mind since these are natural food colorings, they won't be super vibrant.)
  10. Optional: Sprinkles (yes, I know these are typically sugary/chemical-y, so you can def feel free to substitute or omit. They really don't add any flavor, they just look nice in pictures. ;))
Instructions
  1. Preheat oven to 350F. Combine all cookie dough ingredients in a bowl until a soft dough forms. Roll dough onto a piece of parchment paper until about 1/4" thick. Use small animal shaped cookie cutters to cut shapes from the dough. (NOTE: the dough can be a bit delicate, but just go slow and it will hold together. If you have trouble lifting the cutouts from the parchment without them breaking, simply remove the excess dough around the cutouts and transfer the entire parchment paper sheet to a cookie tray to bake.)
  2. Bake for about 5 minutes or until just starting to brown. Let cool.
  3. While the cookies are cooling, combine all frosting ingredients in an electric mixer and beat until a fluffy frosting forms. Using a small spatula, frost the cookies on both sides. (This can get a little messy!) Place each cookie a tray covered in wax paper, sprinkle with any toppings or sprinkles, and put in freezer to harden.
  4. Store cookies in the refrigerator.

  1. Feel free to have fun with different shapes and decorating styles!
